Sodium Diacetate

Sodium diacetate is a molecular compound of acetic acid and sodium acetate. There are no studies with sodium diacetate as such, but it may be\expected to be metabolized in the same way as other salts of acetic\acid after absorption. It is probably similar to that of neutralized acetic acid.
Sodium salt of acetic acid, a natural acid, present in most fruits. Produced by bacterial fermentation and thus present in all fermented products.
The Hyperactive Children's Support Group (HACSG) recommends avoidance as it is a possible allergen.
Should be avoided by people who have a (very rare) vinegar intolerance.
